Holy Corn!

All summer we have been craving good sweet corn. The stuff here in Colorado just hasn't been cutting it, so we were really excited to go home and have some fresh farm sweet corn from CJ's family farm. We did the night after the parade and it was so good! Nice and juicy and the kernels just popped in your mouth. It was heavenly. Eric asked CJ if we could have a few ears to take home with us. Well, CJ was generous and gave us 42 ears! Clearly we won't eat all of this fresh in the next few days so I went crazy and blanched it, cut it and froze it. I can't wait to make  corn chowder with fresh sweet corn in January!

Schucking all of this was real fun.

Schucked and ready for blanching!

Boil on the right, ice bath on the left

Indy helped me clean the cutting board. He likes sweet corn too.

9 Quart size freezer bags of corn. I think we're set for the winter!
